simple vegan baked ziti

ingredients:
{pre-cooked ziti, penne, or rotini noodles made made without eggs}
{marinara sauce}
{canned mushrooms}
{red pepper flakes}
{meatless meatballs}
{vegan mozzarella substitute}

protocol:
1. pre-heat oven to 360oF
2. mix precooked noodles, marinara sauce (enough to cover all noodles), meatless meatballs (frozen), mushrooms, and a dash of red pepper flakes in casserole dish
3. sprinkle grated "mozzarella" over top {note: soy cheese substitutes may become crunchy if baked at high temperature, thus to avoid a crispy casserole topping, add the "cheese" shreds a few minutes prior to removing dish from the oven}
4. bake for 10-15 minutes, or until "meatballs" are hot throughout



skeptical of soy meat alternatives? my meat-loving boyfriend has devoured/approved of both trader joe's soy chorizo (used in my vegan chorizo jambalaya recipe) & meatless meatballs!
