vegan chorizo jambalaya

although i have made jambalaya before, this meat-filled rice entrée doesn't fit my "two-week vegan" requirements. hence, i needed to adjust my recipe to be more vegan-friendly. want to make a delicious & spicy dinner? need to adhere to a lactose-free, vegetarian or vegan diet? you're in luck. my veganized chorizo jambalaya recipe can be found below.


what you'll need:

{brown rice}
{red & green peppers}
{carrots}
{zucchini}
{vegetable broth}
{onion}
{celery}
{trader joe's soy chorizo}
{chili powder with cumin & oregano}
{red pepper flakes}

don't be fooled: you can make this one-pot recipe your own by using orange/yellow peppers, chicken broth, kielbasa, shrimp, or a "cajuny" spice.

next, chop all veggies & cook on medium heat in a dash of olive oil for 5-10 minutes.


meanwhile, brown the chorizo (after removing the casing) in a separate pan. for the lazies: chorizo can be browned simultaneously in the same pot as the vegetables.

once the veggies have softened slightly, add an adequate amount of vegetable broth to cook 4-6 cups of the brown rice. add approx. 1 teaspoon chili powder. cover & cook on medium-high heat until all liquid is absent.

add salt, pepper, & red pepper flakes to taste. serve with tapatío. PIG OUT.
