recipe for success

sweet, sweet success! i have officially maintained a vegan diet for two whole weeks. no milk, no eggs, no cheese, no cream cheese, no butter, no frosting, no meat . . . you get the idea. on my short journey of vegan-ness, i have tried many new foods (including almond cheese and tempeh chorizo) and gotten creative in the kitchen.

my latest original vegan recipe: spicy veggie pasta

ingredients:
{1 can S&W petite-cut tomatoes w/ sweet onions & garlic}
{chopped carrots}
{chopped zucchini}
{frozen peas}
{rotini/penne pasta}
{red pepper flakes}
{salt & pepper to taste}

protocol:
1. in medium saucepan, combine canned tomato mixture & veggies.
2. meanwhile, cook pasta until tender.
3. after zucchini has become tender and frozen peas are cooked through, add drained pasta to saucepan
4. add red pepper, salt, & black pepper to taste.


is this not the easiest thing ever?!
